Home-made Rootbeer

Rootbeer is really easy to make. Unless you want to brew it with yeast. I don't know how to do that; but I don't like it either, so it doesn't really matter. Yeah, store-bought root beer is cheaper, but for a party it's fun to splurge and make some yourself.

HOME-MADE ROOTBEER

1/2 gallon warmish water
3 lbs. sugar
2 (2 oz.) bottles rootbeer extract
3 gallons cool water
3 to 4 lbs. dry ice

Pour all the sugar into the 1/2 gallon of warmish water and stir until sugar is completely dissolved. In a very large container (we use a five-gallon drink cooler/dispenser) mix the remaining 3 gallons of water and the rootbeer extract together with the sugar-water; stir well. [When you pour in the extract, use a little of the water to rinse out the bottles so you can use up every, last, tasty drop!] Put the dry ice into the mix and cover it up. You can't put the lid on completely tight because it will just pop off, but put it as tight as it will stay or your dry ice will just evaporate away and not make the drink fizzy. (This happened to us last Saturday and we had to buy more dry ice and try again.) Let it boil and bubble for about half an hour; maybe a little longer.
