No-Bake Cookies

This morning I sent out a facebook request for friends to make a cookie recipe and tell me how many cookies it made. And you could tell me if there are any typos or really screwy instructions, too. NO-BAKE COOKIES

I don’t know if these are really  cookies.  But they’re not exactly fudge or candy either. 
Anyway, everyone likes them.
Hm. Ours never look as good as this picture.

2 cups sugar
4 Tbsp. cocoa
½ cup milk
1 stick (½ cup) butter
½ cup peanut butter
1 tsp. vanilla
2½ cup uncooked oatmeal

   Boil sugar, cocoa, milk and margarine together for       3 minutes (full boil).  Remove from heat and add peanut butter, vanilla and oats.  Drop by spoonfuls on waxed paper and let cool.

Coconut Macaroons

COCONUT MACAROONS

1 cup cream of coconut
2 Tbsp. corn syrup
4 large egg whites
1 tsp. vanilla
½ tsp. salt
3 cups unsweetened, shredded coconut
3 cups sweetened, shredded coconut


   Adjust oven racks to upper- and lower-middle positions.  Heat oven to  375°.  Line two cookie sheets with parchment paper and lightly spray the parchment with cooking spray.

Whisk together the cream of coconut, corn syrup, egg whites, vanilla and salt in a small bowl.

Toss the unsweetened and sweetened coconuts together in a large bowl, breaking clumps with your fingertips.  Pour the liquid ingredients into the coconut and mix with a rubber spatula until evenly moistened.  Drop the batter by heaping tablespoons onto the prepared cookie sheets, spacing them about 1-inch apart.  Mush them into loose haystack shapes with your fingers.

Bake (two sheets at a time) until the cookies are light golden-brown, about 15 minutes, rotating the cookie sheets from top to bottom about halfway through baking time.  Cool on the baking sheets about 2 minutes and then remove to racks to finish cooling.
   Mmmmm!

Peanut-butter Cookies

PEANUT-BUTTER COOKIES

½ cup butter
½ cup peanut butter
½ cup sugar
½ cup packed brown sugar
1 egg
½ tsp. vanilla
¾ tsp. baking soda
¼ tsp. salt
2¼ cups flour
additional white sugar

   Heat oven to 375°.  Cream butter, peanut butter, brown sugar, white sugar, egg and vanilla together until fluffy.  Sift dry ingredients together and add to peanut-butter mixture.  Shape dough into balls and roll in additional white sugar.  Place balls on ungreased cookie sheets, about 2 inches apart.   Flatten them to just less than ½-inch thick, using a fork and pressing it into the balls in a criss-cross pattern.  Bake for 10-12 minutes.

Applesauce Cookies

APPLESAUCE COOKIES

1½ cups applesauce
1 tsp. baking soda
1 cup sugar
½ cup butter
1 egg
1 tsp. cinnamon
½ tsp. ground cloves
½ tsp. salt
2½ cups flour
1 cup raisins (my kids say optional)

   Heat oven to 375°. In a medium bowl, mix baking soda with applesauce; set aside. In a large bowl, cream together sugar, butter and egg. Add applesauce mixture to the sugar mixture; mix well. Add cinnamon, cloves and salt. Mix in flour; fold in raisins. Drop by spoonfuls onto greased cookie sheets. Bake for 12-14 minutes.

Molasses-Spice Cookies

MOLASSES-SPICE COOKIES

2½ cups flour
1½ tsp. baking soda
½ tsp. salt
1½ tsp. cinnamon
1 tsp. ginger
¾ tsp. cloves
¼ tsp. allspice
¾ cup butter, softened
½ cup packed brown sugar
½ cup white sugar
1 large egg
1 tsp. vanilla
⅓ cup unsulphured molasses
additional white sugar

   Adjust oven racks to upper- and lower-middle positions. Heat oven to 375°. Whisk together flour, soda, salt, cinnamon, ginger, cloves and allspice in a medium bowl; set aside. In a large bowl, cream butter, brown sugar and ½ cup white sugar until light and fluffy. Add egg, vanilla and molasses. Beat until combined; scrape sides of bowl. Add dry ingredients to butter mixture until just combined. Roll into about 2-inch balls; roll balls in additional white sugar and place on ungreased cookie sheets—about 2-inches apart. Bake two sheets at once, reversing positions (from top to bottom) halfway through baking, for 11-13 minutes (until edges begin to set and centers are soft and puffy.   Cool for 5 minutes before removing from pans.
