Oatmeal Cookies

This morning I sent out a facebook request for friends to make a cookie recipe and tell me how many cookies it made. And you could tell me if there are any typos or really screwy instructions, too. MELANIE'S OATMEAL COOKIES
1 cup packed brown sugar
½ cup white sugar
¾ cup shortening
1 egg
1 tsp. vanilla
¼ cup water
1 tsp. salt
½ tsp. baking soda
1 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. cloves
1 cup flour
3 cups oatmeal
raisins to taste

   Heat oven to 350°. In a large bowl, cream the brown sugar, white sugar, shortening, egg, vanilla and water. Add salt, baking soda, cinnamon, nutmeg and cloves until well blended. Mix in flour; add oatmeal. Fold in raisins, if desired. Drop by spoonfuls onto greased cookie sheets. Bake for 12-15 minutes.

Gingerbread Cookies

GINGERBREAD COOKIES

1 cup shortening
1 cup sugar
1 egg
1 cup molasses
2 Tbsp. vinegar
5 cups flour
1 tsp. baking soda
½ tsp. salt
3 tsp. ginger
1 tsp. cinnamon
1 tsp. cloves

   Cream shortening and sugar; add egg, molasses and vinegar.  Stir in flour, soda, salt, ginger, cinnamon and cloves.  Chill about three hours.   [Actually, I never do the chilling part and the cookies turn out fine.]
Heat oven to 375°.  Roll out the dough on a lightly floured surface and cut into desired shapes.  Bake for 5-6 minutes.  Cool; frost and decorate as desired.

Chocolate Chip Cookies

MOM NORTH'S CHOCOLATE CHIP COOKIES

1½ cups packed brown sugar
1½ cups white sugar
2 cups butter or shortening [or 1¾ 
   cups butter plus ¼ cup peanut 
   butter]
2 tsp. vanilla
1 tsp. salt
4 eggs
1 Tbsp. baking powder
1 Tbsp. baking soda
5 cups flour
1 cup chocolate chips

   Heat oven to 375°.  Cream sugars and butter until light and fluffy. Add vanilla and eggs; mix well. Add dry ingredients; mix well.  [I think a little extra flour helps the cookies hold together better.] Mix in the chocolate chips.  Drop by spoonfuls onto greased cookies sheets.  Bake for 8 minutes.  Mmmm!

AUNT MARIAN'S SUGAR COOKIES


½ cup butter
1 cup sugar
1 egg
2 Tbsp. milk
½ tsp. vanilla
2¼ cups flour
2 tsp. baking powder
½ tsp. salt
¼ tsp. nutmeg

   Heat oven to 375°.  Cream butter, sugar and egg.  In a small bowl, mix milk and vanilla together.  In a separate bowl, sift together flour, baking powder, salt and nutmeg.  Add dry ingredients to the butter mixture, alternately with milk beginning and ending with dry stuff [add ¾ cup dry stuff, then 1 Tbsp. milk, etc.].  Mix thoroughly.  Chill at least one hour.  Roll out on a floured surface to about ¼-inch thick.  Cut with floured cookie cutters.  Bake on greased cookie sheets for 8-9 minutes (cookies will appear white when they’re done).  Cool and frost as desired.

MELANIE’S SUGAR COOKIES

I’m not sure where Melanie got this recipe—I think it may have been from our cousin, Julie. But I got the recipe from Melanie.


¾ cup butter

1½ cups sugar
1 cup Miracle Whip
3 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
dash salt

6-8 cups flour

   Heat oven to 350°. Cream together butter, sugar, Miracle Whip, eggs and vanilla. Add baking soda, baking powder and salt; mix well. Add flour, one cup at a time, to make a soft dough.  Roll dough out about ¼-inch thick and cut with cookie cutters. Place shapes on ungreased baking sheets and bake for 8-10 minutes. Cool on baking racks; frost and decorate as desired.
